A small country with great variety - also in terms of eating. Georgia has been a real discovery for us during the production of 50 kitchens, one city. Did you know, for example, that the Georgian saffron is not really saffron, as we know it here in Germany, but from the Tagetes, the student's flower? Tagetes is called saffron in Georgia, because already the ancient Romans have used the dried leaves of the student's flowers, in order to falsify the real, very precious saffron. This so-called "saffron" has been used in Georgia for centuries for the preparation of national dishes - including the Badrijani, which we prepared in the Georgian restaurant Schwiliko.
